dice,roast, blend with roasted peppers and a scotch bonnet chilli.
serve with a dollop of creme fraiche, finely chopped coriander and a drizzle of olive oil.
serve with home made focaccia bread..

Oooh, that's one of my fave SW recipes! Cos they're such a bugger to peel, I cut them in half, deseed and use a melon baller to scoop lovely pearls of butternut squash out and they look great in the risotto! |

It makes a great base for a thick soup such that it can serve as a meal.
To make the soup roast it for a while, then scoop out the flesh minus the seeds and blend it. Then into a saucepan with some water and anything else you fancy adding to the soup. |
