Packet noodles with buttered bread

Rice and frozen vegetables.

When I ate meat it was rice with corned beef and sweetcorn or with tinned mackerel.

Also anyone struggling should look up Jack Monroe. Meals designed for no oven and for people who don't have a Nigella style pantry of condiments and ingredients.

Cheaper per meal but I had to compromise with just the easy of a microwave and at least having a few different flavours of rice to choose from

It was nice knowing I could bring 2 items, a bowl and a spoon basically anywhere and have a hot meal ready in 4 mins

If you like eggs, then omelettes can be a good option, as they are filling and you can put pretty much anything in them. If you can, buy the larger bags of rice and pasta, as that will last longer. Buy wonky veg that has a yellow sticker and prep and freeze it, I do this all the time (got 1kg of carrots for 5p as they were on the best before date when I got them, took them home, peeled them and froze them, so I can use them when I want rather than having to have carrots constantly lol)

My uni friends and I made tuna cakes - mashed potato from a packet, tuna, onion, rolled in egg and then breadcrumbs. Tuna at Lidl is still pretty decent price.

I was just gonna say this sounds expensive. Tuna feels expensive to me anyway. Eggs are a bloody fortune too

Yeah but when you’re in it you get by and you find your struggle meals. Plus housemates and flatmates always help with ideas.

Markfield

Cous cous is a pretty cheap and filling carb which you can add random stuff to depending what you have and what you like. It’s also low energy to “cook” so if fuel poverty is an issue it can be inexpensive for that too. Chick peas and sweet chilli sauce with cous cous is pretty tasty. Olives and cous cous with kidney beans in chili sauce is pretty tasty. Or go a bit more Mediterranean with olives peppers sundried tomatoes if they are in the fridge.

Should we do a ready steady cook thread?

Give random ingredients that you’ve got left in the fridge and make a meal from them with store cupboard stuff.

Reading

Spinach curry (soup). Takes 5 minutes to feed two at about £1 each (egg)

1 x 1kg tin leaf spinach. Not puree! Don't drain it.

1.5 teaspoons sugar

1 to 3 teaspoons curry powder

grate in a whole nutmeg, or two.

plus anything you have, such as

poach a couple of eggs directly in the gloop.

Or a few cubes of paneer.

Or a few peanuts.

Or shredded leftover over KFC.

anything really.

"I definetly think it's something that should be taught in schools. You can make a meal on next to nothing if you have too"

Absolutely.

It’s a common thing I see online, especially with the cost of living

“It’s too expensive to eat healthy so people resort to fast food or junk”

Anyone that says that hasn’t ever struggled. Anyone that’s actually struggled will tell you that fast and junk food are luxuries when you’re actually poor.

Tuna pasta bake was a favourite of everyone at uni. A ftittata is always good. Chuck on stuff from the fridge, couple of eggs and bob's your uncle.
