Given the nature of this site, I'm surprised Tightrope hasn't been mentioned.
It's a taught police-procedural thriller, but in the (coming up to) 40 years since it came out, times have certainly changed. The police are hunting a serial killer which they have identified as being "kinky" and a pervert because - Dun-dun-DUUUUUNNN - he likes to use handcuffs during sex.
We now live in an era where most couples have a set of cuffs stashed somewhere in the bedroom, and isn't considered as perverted anymore.
As for The Good, The Bad and the Ugly? My favourite exchange has to be:

His later westerns are so much better. You know, like Unforgiven.
