Happy to be corrected, I’ve never understood why it’s added to pasta or paella other than to change the colour to black; it adds zero flavour to the dish!

Very popular across the Spanish islands in my experience.

Love squid, but i prefer it simple, bocadillo de calamares is my fav or lighted battered with garlic mayo , the ink i have tried a few times and its not for me,, very strong tastes

When done well, it can add a 'seafood' taste to the pasta or, at least, the smell of it. I dislike seafood in general, which, perhaps, makes me more sensitive to the smell and taste of it.

Sometimes, the more delicate smell and taste of the squid ink in the pasta can be overwhelmed by a seafood sauce, making it seem like it 'adds zero flavour to the dish.'

I ordered some in Ibiza as part of a tapas. The guy spoke perfect English but looked at me puzzled and so I pointed at the menu

He realised what I was after, laughed and said “Sorry! I’ve never heard anybody ask for it in English!”

It sounds more exciting than it is. It adds more depth than flavour
