So I am trying to eat a vegetarian dinner at least twice a week, for health reasons, as due to work commitments my food can be very processed based.
Has anyone got any ideas of quick and easy meals that isn’t a meat substitute or eggs and something? |

Love a stir-fry. Rice instead of noodle. Very quick and easy.
Have you given some thought to getting a slow cooker? You can whip up loads of things and set it for when you get in. Soups, stews, Currys etc.

Thanks for the ideas. I have used a slow cooker and I know it’s all about finding time but sometimes crazy hours mean work, sleep and repeat.
I’m spending more time driving, about 5 hours a day on the M5/6 corridor so during the week function is survival! |

I'd suggest a pressure cooker rather than a slow cooker if you're pushed for time.
I batch cook meals and freeze individual portions. So 1 cooking session can lay in 12 meals.
Then I always have food in to come home to. Means I don't cook every night, I cook about twice a month to make suppers. |

Get a pack of Mediterranean vegetables in Supermarket. Plus some veggie sausages . I found cauldron brand in Asda are ok. Put the veg and 3 sausages in a roasting tray. Drizzle some olive oil over and sprinkle with mixed herbs and garlic. Add some Balsamic vinegar if you have it. Mix it up a few times so all ingredients are coated. Then bake for 20 to 25m at 200C. Enjoy. Some supermarkets sell tte veg in a foil tray to bake them in ..just pop the sausages on top. Maybe turn the sausages half way through to brown both sides. |

Just few ideas and easily done in minutes and can be eaten either hot or cold. Easy recipes on the net.

Stock your freezer with frozen chopped garlic, ginger, chilli, chopped tomatoes, onions other various vegetables of choice, stock your pantry with tins of pulses eg lentils, kidney beans etc tomato puree, vegetable stock cubes and tins of tomatoes. Make sure you have good quality pasta and sachets of microwave rice too. Quick and easy meals can be made from a combination of those things eg soften garlic and onions in oil, add a tin of tomatoes, thicken with puree and simmer with chilli to taste, serve on pasta. Use that basic sauce and add a tin of pulses and serve with rice. |
