Normally a week and use brandy then inject cake daily for at least a month or longer.
For those who don't want alcohol i use fruit juice such as apple or orange to soak the fruit for 3 or 4 days don't soak in fruit juice much longer than that. |

If I’m making Delia’s Creole cake for Xmas I’ll leave the fruit soaking for two weeks. For my other cake which is what I made this year, I don’t soak the fruit at all before hand, but it is drowned in Fursty Ferret beer in the mixture. It’s much lighter and is delicious |

My Nan used to make my cake and my Mum made Christmas pudding. Like you, we buy it now. I’m really should have a go at making it one year.
