"I had salad for lunch. Sweetcorn, red onion, yellow pepper, cucumber & tomatoes, with chilli olive oil and lime juice for dressing. With some feta crumbled on top. "
Sounds like the one I do sometimes, what there is in the fridge and always some sweetcorn as I love it and feta whenever I have any though normally do as love a greek salad too. |

I love my version of Turkish Shepherd salad - chopped lettuce, green pepper, tomatoes, parsley and red onion, with garlic, olive oil, lemon juice and sumac… even nicer with grilled halloumi, chicken or lamb |

There is a great French one that's a favourite of mine. Slice chicory and perfectly ripe Comice pears. Crumble Roquefort and walnuts into the bowl. Add rocket and black pepper croutons, then mix a vinaigrette (tablespoon of Dijon mustard, tablespoon of white wine vinegar, sunflower oil in a dribble until emulsified, add tarragon or other herbs if liked, and season to taste), and serve with warm, crusty baguette.
It's a lovely balance of flavours and textures. It also works well with figs or russet apples instead of pears. |

I go for tomato, watermelon, mind and feta. Fresh and good, also made a great gazpacho with mint and watermelon. |

It’s not summer-like in the UK at the moment, but I had a salad yesterday that reminded me of refreshing summer salads. It was so nice, I woke up today craving it.
White small beans
Edamame
Pearled couscous
Celery
Fresh dill
Parsley
Capers
Spring onion
Artichoke hearts
Toasted pecans (the recipe said pine nuts but I couldn’t find any where I’m at)
Halloumi (the recipe said feta crumbles but I also couldn’t find this. I d see oak the halloumi, after slicing, in boiling water for ten minutes before pan frying dry. It’s the best way to “grill” halloumi.)
With a vinaigrette of: olive oil, lemon juice, lemon zest, Dijon mustard, garlic, fresh oregano, parsley, white pepper and salt
