The jelly. Omg that delicious salty jelly that turns into juice with the warmth of your mouth... its like a ready made pie with gravy inside! A pork pie isn't a pork pie without the jelly. FULL STOP! It seems that most manufacturers are shying away from the jelly these days. Without it, it's just dry pork meat in pastry. Which leads me to the pastry! Has to be a littlr greasy, not dry, with a crisp mouth feel... and then the meat - well seasoned, firm, and meat only - no fillers for this man... I love pork pies with a little mellow yellow American mustard smeared onto it

Pork pies are foods from the Gods.
Good quality ones are amazing. Just plain and simple pork pie, none of that fancy additional fillings like pickle or apple.
Just give me the meat, the jelly, the crust. |
