Also, I am aware that fat is the noun that refers to the stuff that makes someone "not slim" as well. But in the world we live in, it is the opposite thing to slim as well.

Also... what about those people who are actually right in the middle of the two descriptors? Have they got to choose one or the other to ascribe to?

We were talking about this today, me and my partner. I'd say in proportion means that you aren't blessed/cursed with one particular part of you looking bigger/smaller whilst taking in account your whole body? In proportion could mean the ratio of your top to bottom. Some people are quite top heavy with decent legs. Some are slimmer on top with big bum and thighs. Etc. I guess 'in proportion' means that nothing stands out and distracts from the rest of your figure ? Brainstorming out loud here.

-I can see why that's pro freedoms, but I don't really see any of those as choices or agendas. It's very Western too - one day I'll see Black/non Black, or better still Asian/non Asian in these things lol)

Most people are both slim and large over their lives I think, and pretty rarely is it much of a choice for them imo. I think that both men and women tend to go a little more for curves with some flesh - but it's pretty marginal probably.
