Had SAMPHIRE for the first time in ages last night with some baked cod and a white wine sace.
...sooo good
So, i got to thinking.
Any other under-the-radar veg?

Have you tried samphire fried in salted butter? It kicks it up a notch.

All veg is great if cooked the right way, I hated it at school always boiled to death no taste just a soggy grey mush on the plate.
Fortunately my mum wasn’t bad at the old veg nothing adventurous mind but the usual staples found on the market in the 70s and 80s.
One thing I couldn’t abide as a kid was celery most salads in fact now love it and tomatoes which I know is technically a fruit.

I like Romanesco, it’s green but is related to cauliflower, is also much smaller. It’s not widely available, I see it in Lidl mostly when it’s in season. I also like cauliflower & tenderstem broccoli. Purple broccoli is quite tasty too |

Never knew mushrooms had so much taste until I found that if you just place a casserole dish of water in the oven until hot,place 6 flat mushrooms in it and leave for 20 mins,they taste amazing |

AHH I had forgotten all about Samphire! Been about 10 years.
I shall try get some this week.
I eat pretty much any veg, but I've been eyeing up celeriac on my recent shopping trips.  |

I like most veg but my least favourite is broad beans. I also like an Asian vegetable called mogi. It looks rather like a large parsnip. You can make chips out of it and more recently I've had it diced up in a chilli sauce |

Had them tonight with a baked ham and roast sweet potato.
Less is more when it comes to cooking green beans...more is more when it comes to the buttet |

Callaloo.
It's delicious and appetising.
Comes from the same plant family as spinach. It tastes similar, but the taste is much stronger and more defined.
If you like spinach but think it just tastes a bit too subtle and mild, you'll definitely like callaloo. |

The root of the plant (also known as 'Dashheen' and 'Taro') is also a valuable food source but despite the claimed family connection, I am not aware of anyone using the root of spinach. |

I need to increase my vegetable intake. Sugar comes from beets or cane doesn't it? So technically everything made with sugar is a vegetable? Right, that's more chocolate for me.

I'm gonna tell you a little story so's you'll understand what I'm talkin' about
Down there there's a plant that grows out in the woods, and the fields
And it looks somethin' like a turnip green
Everybody calls it polk salad
Used to know a girl lived down there and she'd go out in the evenings and
Pick her a mess of it
Carry it home and cook it for supper
Because that's about all they had to eat
But they did all right |

Kidney beans
Sprouts
Parsnips/ turnip/ swede can all do one.
Sweetcorn is a little meh too. |

Sliced red cabbage lightly fried with a couple of garlic cloves, butter and a dash of olive oil once it has softened slightly add some balsamic vinegar and grated nutmeg and let it steam with a lid on the pan cook until the liquid reduces and it becomes slightly crispy and serve. |
