What have you got in? Paul A. Young (great chocolatier - I can't resist his shop for the salty caramel balls) did a ganache with orange juice on Sunday Brunch last week. You can also to tea ones or go for the classic cream. |

Go early - the shops will be mad!
Decide what sort of truffles you want to make. Whether you want them to have crunchy outsides or just a cocoa dusting, or a sugar dusting. If you want to make different flavours then going for a classic cream ganache is probably best as you can then flavour batches separately. |

Delia had a recipe many years ago, involving dark chocolate, butter, cream, yoghurt and alcohol.
One should be able to find it on her website, and I know there is a vid on Youtube showing her making them in 2 parts, as my colleague found them on Friday when we talked about making truffles as gifts.
