The one I’ve done in the past the gets asked for again most often is Arancini. I did some bite size ones with a salmon and cream cheese filling and a small side salad. Everyone loved it |

It was for me, I do risotto quite often anyway so I’ve got that bit down oat so to speak. Basically make a base risotto a day or two before and chill in fridge. Once cold roll I to little balls with your choice of filling in the middle and roll in breadcrumbs. On the day a quick dip I some hot oil or pop in very hot oven to crisp up and your done. You can vary the fillings for your own taste of course |

"^^all good ideas
Pate is currently my first choice "
Oh I love pate, I've started on it already.
Between that and mince pies I expect to put on a few pounds. |

I make mackerel pate!!! It’s so easy !
Just mix the fillets with crème fraiche, bit of horseradish and parsley. Serve with a bit of crusty bread & pickles
I make it posh on Christmas Day & do the melted butter on top x |

Use Gu pudding dishes for the pate then pour a good melted butter over the top restaurant style - will look totally homemade
I always play safe with a soul though as my lot are boring

Brie and cranberry fillo pies ( my favourite, I do and freeze then too) with little salad or french onion soup, or asparagus wrapped in parma or a terrine or a nice charcuterie. Might think of few more in a mo |

Salmon and cream cheese blini. Garnish with some dill/basil.
You can buy pre-made blinis and then just add the topping. Prepare them earlier and keep fresh in the fridge. |

"Great suggestions everyone, thank you.
I'm very probably going for pate with some nice crackers "
I thought you might go for the brie and cranberry filo patries, very festive and keep really well |

Toasted ciabatta with oven roasted cherry tomatoes and mozzarella and basil, can be cooked in the oven while your roasties are finishing off and pop the ciabatta in the toaster although Pate is probably the quickest and less stressful option |

My dad's coming. He's quite conservative in his tastes and I really want it to be special for him (first Christmas in 70 years without my mum). |

Aye, melon balls with other fruity garnish, like slices of oranges turhed into "sails". Brings back memories |

You could make it quite visually appealing! Melon boats with orange sails and raspberries dotted around the "hull" for the waterline |

Don't forget smashing bottles of Champagne against the hull when you launch each of those boats! |
