So, I think the reason why people do this is because it gives you that moment of readiness for the rest of the sentence, almost like someone saying "umm" before everything, it helps you organise your thoughts and alerts those around you that you might have something to say.
Moreover, I feel that when you begin a sentence with "so" it sounds slightly more conversational as opposed to jumping straight in with what you have to say which could potentially sound abrupt, short tempered or snappy.
I'm not saying it's right; these are just my thoughts on why it happens  |

Buddy Holly died before my mother was born (just about). It's old music, but my favourite sort. Our first dance was "True Love Ways" and we have him on in the car most mornings. |
