Mix/blend the following until it is a gloopy mess:

Tomato puree

Worcester Sauce

Light Soya Sauce

Honey

Hoi Sin Sauce or plum sauce for Peking duck

Vodka or sherry

Spring onions

A few dried bird's eye chilli to taste

Freshly ground black pepper

Lemon juice

A pinch of Chinese 5-spice powder

Garlic

Ginger

Parsley

Sorry, I don't have exact measurements. I know it is made right in terms of taste and consistency when I test taste it.

Much easier is the following......blend together

1/2 tsp of mustard powder

Dash of lemon juice

2 tbsp of plum jam

2 tbsp honey

2 tbsp tomato ketchup

2 tbsp soy sauce

1 tbsp Worcestershire sauce

1 tbsp vinegar

(Depending on how many you are cooking for you may wish to double up on all ingrediants except mustard powder)

Get ribs from the supermarket and place in a large saucepan, cover with water and a dash of vinegar ( not from the list above). Bring to to the boil and drain.

Place ribs in a large oven roasting pan, cover with the above sauce and cover the pan with foil.

Bake in oven for 30 mins @ 180 c (350 f or gm 4) Then remove foil and put back in over for a further 20 mins @ 200 c (400 f or gm 6)

Serve with either noodles (I prefer plain boiled rice as there can be a lot of sauce)

This is a tried & tested and has been eaten by my family for many years. It's delicious

As a self confessed nerd……seeing the term “spare rib” I felt compelled to investigate the origin of this name….!.

Sigh,,,,,, so having googled the answer of which I found several different interpretations, none of which seemed definitive,,,,,,, my conclusion now rest with the thought the internet can be a wonderful tool….!.

It can also make a complete tool out of a nerd like me…….!.

Think ours is a long one but I will try and remember it all

Molasses sugar ( half a pack)

One can of tomatoes

Bottle of tomatoe ketchup

The rest are a teaspoon of

Garlic powder

Onion powder

Smoked paprika

Cayenne pepper

Black pepper corns crushed

Chilli flakes

Honey

Cinemon

Heat and reduce for half hour

The longer you leave it in a bottle the more the spices blend it's so nice we have to give bottles out to friends
