Just had my roast late. Gravy a bit lumpy as I rushed it.

Lumps, runny, tasteless ...when did a gravy most horrify you. .?

Reading that

I take so much time with my gravy. It’s my favourite part of a roast.

I’ve been to wonderful restaurants and had perfectly cooked meat & then this brown water has just ruined it for me. Good gravy should be able to be eaten in it’s own like soup

Simon Hopkinson does a beautifully simple not-quite-gravy for chicken. Baste the chicken liberally with butter, salt, and pepper, and stuff with fresh tarragon and lemon quarters, and more butter. When the chicken is cooked, drain, and deglaze the juices, butter, etc with good white wine. Make a quick roux if you want to thicken it.

Jus isn’t a gravy, it’s a liquid derived from the meat, that has been reduced down until it reaches its desired consistency which is thinner than a gravy.

Gravy is thickened using flour or a thickener and is delicious over your veg and roast tatties
