Bread was a very important food source in the medieval period and people were reliant upon the baker to get a lot of their calories. As such, it became regulated, with laws stating how much a loaf of a certain cost should weigh. Bakers could be punished if their bread was underweight, so they began to throw in an extra loaf per dozen, just in case the loaves were minimally underweight. It was also a goodwill offering - a way of saying "look, Im not swindling you! I will even throw in an extra loaf so you can feel confident that I have good intentions!"

Was it the the master baker squeezed a little bit more white sticky stuff out so he could put an extra bun in the oven ? |
