Help please,
I only ever cook meat dishes, but my daughter is having a friend over for night in couple weeks for tea and a sleep over, she's vegetarian, I have no idea what to cook ??? |

Also check that cheese is veggie, don't use parmesan as it never is veggie, and if you put booze in stuff then check that too (Sainsburys are good at labelling their own) Look out for whey (powder) in things as that's a bugger for getting into things that are otherwise veggie
Not knowing how strict she is this is just 'better to be safe than sorry' advice |

Quorn is an awesome replacement for meat/chicken in meals. Tesco have a wonderful veggie range of their own the veggie burgers are fantastic much better than Quorn burgers. Since roast potatos are usually cooked in meat fat Flora do a lovely bottle of oil that works just as well. |

Chop onions, courgette and peppers into chunks slightly larger than a cherry tom and put in a roasting dish. Drizzle a little oil (pref olive but sunflower will do) and a little balsalmic vinegar over, season.
Put in hot over (gas 7ish) for twenty mins.
Turn them all over and add cherry toms.
Back to oven for another twenty mins.
Cook pasta and serve with roasted veg over the top, and some grated cheese if people want to add it (veggie natch).
You can add pesto but it's optional and the veg should have plenty of flavour.
A speedy balanced veggie meal is piperade:
Chop onion and peppers and courgette into small dice (small enough to get two or three pieces per forkful) and soften in a large frying pan over a gentle heat with just a splash of oil.
Keep stirring till the onion goes translucent.
Turn the heat up so the veggies brown a little as you beat some eggs with salt and pepper - be generous as it will season the veggies too -(two will do for one person) and then add to pan and scramble around the veggies.
Serve with bread - flat bread warmed slightly in the microwave is perfect for this, tortillas or chapattis.
You can add a little chopped chilli or chilli flakes or even a splash of tabasco to the eggs if you like.
You can also add mushrooms to either meal but I wouldn't - mushrooms are ick! |

Late to the party, however, my trusted veggie dishes are:
Mushroom or roasted vegetable risotto
Spinach and mushroom lasagne or other pasta shapes
Spaghetti with cream and wilted rockets and garlic
Spaghetti with broccoli, lemon, garlic and chilli
Mushroom or roasted vegetable tart
Etc.

I had savoury rice with grilled halloumi cheese and cherry tomatoes on top, was yummy. |

"Did nt read the entire thread - anybody suggested a dish usually done with meat but use quorn instead? Much lighter and I guess a bit healthier than some meat dishes...
I'm veggie....spag Bol with quorn mince or just get m&s to do all the hard work..." I am not a strict and total vegetarian but I llove using quorn. It is so versatile, goes with everything and has fewer calories, less fat and never any bones, gristle etc to contend with. Love the stuff. |

I'm not veggi either but quorn is great as you can cook with it straight from the freezer. |

look up Hugh Fearnley whatsit's info online about vegetarian dishes. There is a mean curry with butternut squash and another ok one with aubergines (anyone that makes something nice from those things gets Respect from me).
Guardian online I think. I like the SP one- dead easy and good for meat eaters too. |

Go to Holland and Barrett and grab their protein mince, you can either get natural or died if you want it to look more like a mince colour. Soak it in a couple of good vegetable stock cubes overnight or alternatively a Marco Pierre White vegetable stock pot and then use it in the same manner as you would mince beef, in any dish which asks for mince. |

Find out if she eats quan, mushrooms nuts and fish before you plan what to cook. We have a couple of veggies in the family and they can be pretty fussy. |

I like to make cous cous with spices and vegetables/nuts/fruit such as garlic, peppers, mushrooms, olives, peas, spring onions, lemon juice, parsley, toasted almonds or pine nuts and sultanas or chopped apricots.
Spices would be cinnamon, ground cumin, paprika and some chilli flakes.

You need to look at all your products, some cheese has rennet in it so not suitable for veggie's, lots of products that seem ok to eat may have hidden animal products in them so whatever you cook make sure you cheak the ingredience of everything you use in the meal |

I have a really nice recipe for vegetable and halloumi burgers I made for vegetarian friends of mine I will pm you the recipe tomorrow. Its grated carrot courgette tofu halloumi and egg to bind it formed into patties and baked in oven very tasty and easy to make served in pitta breads |

don't do mushroom risotto. any quorn. any lasagne. and even a curry is pushing it.
if you're a vegetarian then these are the things you get given every bloody time!! not that i am...
something that shows a little effort and thought will always be more appreciated...
but hey! what do i know!!! ha ha!! |

Just takes abit of reading labels, I find avoiding gelatine worse it's in my favorite sweets jellies, foamy bananas and marshmellows, Haribo veggie jellies are rubbish. Also I hate alot of veggie things esspecially in resturants everything is spicey, loaded with onions and that makes me heave. |

Make a vegetarian lasagne with a goats cheese sauce. Use vegetables that will add flavour to the tomato based sauce. So veg like leeks, carrots, broccoli, mushrooms as well as garlic and onion. Use a vegetable stock cube in the tomato based sauce as well.
Serve the Lasagne with a salad also maybe? |
