Onion - sliced thinly, fry gently.

Pepper - sliced thinly or into chunks. When onion is soft add to pan.

Mushrooms - sliced thinly, add to pan once pepper is softened.

Once mushrooms have are done to your liking. Sprinkle over 1/2 of one of those Mexican fajita spice packets. Stir well until all is coated cook for another few mins if desired.

Scoff.

Cheap, tasty, filling and low in calories.

You can substitute the spice packet with a packet of microwave rice. Add an egg too if you like.

A lot of these meals, while delicious, don't seem very nutritious. Remember that around 6/7pm most supermarkets will start reducing perishables down to their lowest price, and you can often get super cheap veg with a day or two of life left in them.

I picked up a packet of fresh mixed veg for around 30p the other day, sautéed with soy sauce, chilli, garlic and fresh basil and topped with two poached eggs. Cheap, nutritious and filling

Boiled egg & salad cream sandwiches - egg chopped into small bits, diced spring onion, tomatoes, knob of butter & finally, salad cream added for taste.

According to a woman on a radio 4 extra programme, only people in prison & on housing estates have salad cream on food.... Everyone else has Mayonnaise.

I live a two minute walk from a Tesco, so I often check to see what's on offer at the end of the day.

I've cooked many good meals that have cost under a quid and with having one of this big American style fridge freezers, meat and veg will stay good up to 3-4 days after the use by date.

I hit up the bakery at my local ASDA last night and all expiring bread products were down to 10p. My freezer is currently full of (branded!) bread, scones, crumpets, pancakes, focaccia etc and it only cost me £1.

I also use apps like Too Good To Go and various cashback apps - my best haul was a shop worth £160 for just over £40.Homeowner status, here I come!

This! I have been trying to do small things like cooking multiple portions at once, covering water with a lid to make it boil faster and using my air fryer instead of the oven. I didn't think it would make much of a difference but our bills did not go up nearly as much as projected in early April

I've been using the airfryer more too. The days of long, slow cooking are over I think, even the slow cooker ramps the bill up.

Missin’ Yo’ Kissin’

Minced beef/pork is a very cheap & nutritious meal. Done in a slow cooker.

If I buy 150g from the butchers then this will feed 4 people. I chop up a couple of big spring onions or red onions (3-5mm.) Put onions in the bottom of a slow cooker. Add the mince, couple of low salt Oxo's. Add chopped garlic (from a bottle), then some parsley & mint then fold the mixture. I add hot boiled water & leave to cook for the next day.

When the next day comes I buy microwave veg (4 in a packet), then I steam it once it's been zapped for a few mins. I get baked potatoes bake them. Once cooked I scoop out the flesh & save the skins (freeze them so I can make a snack the next day or the day after that -butter, cheese & paprika/chillies powder & grill.) I add butter/garlic butter & make mashed potato (I can save mashed potato If I make too much to make veg bubble & squeak....)

Any left over food is put into a take away silver dish & frozen. I just use a microwave.

Slow cookers are good as they are extremely energy-efficient. The heating element in slow cookers uses a very low current and instead relies on trapping heat inside the appliance to cook food.

Home made chilli or spaghetti Bol can be cheap because for a single person, one pack of mince can last for 3 meal. Rice or pasta is only pennies for a portion.
