Banana pancakes

My first attempt, they have a sloppy consistency, even when fully cooked through.

Tricky to get out of pan and break.

Does anyone have any tips?

One banana, one egg, dash of vanilla essence.

I found it best to cook at a lower heat and for a bit longer, then then aren't soggy.

Small amount of coconut oil as well in the pan.

The recipe i used 1 medium/large banana, 2 eggs and cinnamon.

Topped with Greek yoghurt and mixed berries.

My easy go too is

150g ripe mashed up

2eggs separate the whites and yokes

25g protein powder.

Cinnamon and 1/4 t spoon baking powder

Mix all in a bowl but leave egg whites out. They need to be whisked then added and folded in slow to the mix.

Low heat 3 to 4 mins each side

Cooks about 4 to 5

Top with Nutella an syrup

You can also have added 50g oats blended up too.

Your cooking the outside and the inside isn't properly done

Lower the heat

Add some oats aswell

I've got a couple out of this batch, left the last one longer and lower and it came out better

Yeah I think I am. They take longer than flour pancakes.

Yes it does and they taste so Fluffffffy

Have a look at Mary Berry scotch pancake or drop scones recipe.

Use the base of it but add vanilla essence, 2 thin sliced bananas, maybe some orange zest if you want.

Hot pan, brush with oil then boom.

I always find 1st one turns out crap

The last one of the batch turned out the best. I put more mixture in the pan and cooked it for ages.

Next time I'll try the egg white thing as it was a bit flat, even though I used baking powder.
