On a mooch

Make two batches of fairy cakes, simple vanilla flavoured sponge, then split into four

With buttercream & jam - butterfly cakes and mini Victoria sandwiches

With icing, made from icing sugar & water to preferred thickness) - lemon cake add flavour to icing and add a lemon segment, and nanna’s fairy cakes with added sprinkles

That is what I am making today with homemade Strawberry jam and fresh cream in my book that is the only way to present a Victoria Sponge
