Cheese, every bad restaurant seems to 'load' everything with cheese. Now im not a cheese hater but it doesn't bring flavours out in food it accompanies it just over powers the dish and used to mask i crap meal prepared by a shit chef in a rubbish chain eatery. |

As for carrots in that context, in traditional Italian cooking it's not unusual for grated carrot to be used in a tomato-based sauce as a preference to sugar (to counter the acidity of the tomatoes). |
