I love me some Red Leicester or mature cheddar.
And sauce wise, it depends, I like balsamic glaze but I also am such a fun of putting an anchovy or two on my cheese on toast. Effing nom |

Mix of cheese, no point going for just one.
If I'm feeling a bit fancy, sourdough bread, taleggio, mozzarella, mature cheddar. Maybe some finely sliced spring onions on top.
If it's comfort time, thick white tiger bread slice, mature cheddar, red leicester, sea salt (Maldon) and white pepper. |

I had that for my tea last night. I had stale half baguette baton, I sliced it length ways, drizzled some olive oil and balsamic vinegar on it before topping it off with grated mozzarella. It was quite nice |
