All you need for a good roast im my opinion are the badic traditional ingredients

Beef (lamb or chicken), roast potatoes, yorkshire puds, peas, carrots, gravy.

All the rest depends on what you like adding from extra condiments to other veg and stuffing. Tbh, I don't like lots of extra except perhaps some mustard. At Xmas I do like all the extra, especially stuffing, pigs in blankets, sprouts with pancetta and chestnuts to name a few.
