Gluten Free Dinner ideas

So, I saw the vegan thread from another OP, and here I am, inviting some friends over this weekend for dinner and I’m cooking

Now, I’m not a fussy eater at all but I knew they were Vegetarian, the tricky part is that one of them is GF (gluten free)

I was gonna make a veg lasagna from scratch (vegetables and besciamella) and will still go ahead probably with that, but I need an alternative that isn’t ice on ice, for the GF option.

Maybe roasted veg + roast potatoes? I’m SO tempted to cheat and go to M&S or whole foods and get one of those “bang in the oven” type thingys

I think I’m gonna have to do that, and maybe just do a salad

I’ll put it in an oven dish beforehand, so it looks like I SOO haven’t cheated

I really wanted to try make it all from scratch but it’s becoming a mission to do more than a dish

We do them in sainsbury's along with all the other pastas in the free from section x

Google keto recipes.

You can make lasage and use thin strips of courgette or aubergine.

Gram flour for the bechamel works well.

If u use flour to thicken wont b but they have gf flour as well! It's usually an intolerance so dont think u kill them had gf and dairy intolerant kids at the school I was cook at was a nightmare and time consuming to cook them separate meals x

If you are going for lasagne, can make gluten free lasagne so everyone is happy. Lots of recipes online. Just a thought as everyone then feels equally included

Gluten free lasagne sheets and gf flour for your bechamel are easy to source in any supermarket. Voilà, only one dish required

Also I saw someone said it's usually an intolerance so you won't kill them further up the thread. Not true. Sure, killing them is unlikely, but plenty folk have wheat or gluten allergies.

I’ll just have to make sure about milk as not sure if there’s a significant intolerance to lactose as well

I know they drink alternative milk (I mean I’m the same on the matter but I shelf it when it comes to besciamelle and ice cream and cheese)

You can make it with alternative milks. Plenty of recipes on the web just look up dairy free béchamel.

If you make lasagne check the ingredients of any other sauces/condiments you use and avoid anything with barley, rye and wheat in the ingredients and avoid cross contamination.

Curry is another good meal that is easy to avoid Gluten. Again check the labels on jars. They could even have bhaji on the side.

My daughter in law has a gluten free diet due to her being coeliac, and it can make her really poorly. So no while it won't kill them it will make someone with coeliac very poorly

I am kinda going off the idea of the veg lasagna as there are too many components that I need to tweak

SO, I was thinking stuffed peppers (with rice and veg in it) for everyone, maybe roasties and side salad .

Fuck it, cheap and easy

I could do a homemade butternut squash soup as a starter

There is so much out there these days for all special diets! Remember when one of my daughters was diagnosed with colitis at 3 we had to cut stuff out her diet to establish what if any food stuffs were causing the condition was a nightmare back then x

Yes you can buy it or make from scratch with gluten free flour, just use half of what you'd use as the base of your rue.
