True story:

As a teenager at a family gathering I witnessed a family member - after a few too many - pick up the coleslaw bowl, start convulsing and throw up into it.

Whilst my teenage brain (which was mildly affected by the alcohol I had secretly consumed myself) was still processing this a family friend - who was clearly oblivious to what had just happened - wandered towards the coleslaw bowl. They picked up a spoon, gave it a stir then plopped a good couple of spoonfuls onto their plate. Even worse, they commented on how good it was.

I have never been able to eat coleslaw since...

Either is fine but I hate the shop bought stuff that are so wet and swim in that dressing. I like making with very little mayo, sometimes just olive oil and squeeze of lemon, tastes better and is healthier.

Well this one is not strictly coleslaw but certainly a slaw. Red and white cabbage and carrots shredded, finely chopped coriander or flat leaf parsley that I prefer , a seeded and finely chopped chilly and a finely chopped spring onion. Few seeds like pumpkin or crashed almonds or walnuts or sunflower seeds- any are fine and use what you like according yo your taste. Its the dressing that makes it light and tasty and you can mix with a tiny bit of mayonnaise if you like and will stay nice and fresh, notvlike the wet stuff you buy. Or use this dressing made with 3tbsps extra virgin olive oil, a minced clove of garlic, couple of tbsps of wine or cider vinegar, a tblsp of honey or maple syrup, a little cayenne pepper and salt and black pepper to taste. Enjoy.
