I was driving by a farm and they had big sacks of carrots outside selling them for £1.50. I got tempted, put a couple of quid in the honesty box and got a sack. I made three carrot cakes so far, kept one and gave the other two. I still have about two thirds of the carrots left. I am thinking of making some carrot jam but not sure. Any ideas please? (Keep it clean ) |

Coleslaw
Grated carrot/onion/cheese mixed with mayo and use as a sandwich filling

Apparently on toast or pastries or with various meats. I found a nice Persian recipe online that sounds good with lots a good reviews. Might give it a try |

Just googled it and you can freeze them, so a good option. Gosh, I am going to be slaving over that stove for a week but thank you all for your suggestions. What a foodie lot you all are |

Shred them, pack in jars and cover with apple cider vinegar, salt and any flavourings, poke the bubbles out, screw the lid on.
Unscrew the lid a bit every few days to release some of the pressure and eat when you want to.
Lasts months. |

Carrot flan ..... like pumpkin pie..... Delicious
Stir fries. Lentil soup. Sticks for dips. ..... Roasted as a mash topping ...... the list is endless ....
Thumbs up to the person that said pickles.
Blanch them, slice thin and pickle for snacks and salad toppings...

All brilliant ideas. I am tempted to go back for another sack at that pice, only £1.50. Anyway so that you know, made carrot cakes, some fritters and soup and blanched and frozen some. Having few roasted with some chicken dinner later this eve. Thank you all. |
