As the temperatures have dropped (and my waist has got bigger ) I’ve started doing my own soups for lunch, which has got me thinking… what is people favourite soup - so I can steal your ideas of course- Mine is butternut squash with peanut butter and Tabasco..

Squash is mine too. I roast the pieces in a dusting of curry powder and drizzled oil before they go in the pot. One or two chillis go in for a bit of heat much as your tobacco would supply.
Intrigued by the peanut butter though.

Well I cheat.
Buy a tin of chicken and vegetable soup and then add all the almost ready to throw away veggies in the cupboard, lasts for days and great to snack on. |

I've never made them myself but two homemade ones I had before was a beautiful tomato soup, my ex's dad made it from all the different types of tomatoes he grew himself, at least 7 varieties. The other was a chicken noodle made by a friend, was one of those chuck it all in and leave it constantly simmering on the stove affairs.

I buy a veg pack ( carrots/swede/parsnip/onion) potato and celery
Chop up, add two knorr veg stockpot pots dissolved in hot water. Boil until veg is soft. Quick blitz with a liquidiser to desired consistency and enjoy! A big saucepan will last me two or three days |

My mum makes “Potage du Poubelle” or rubbish soup from the left overs of a Sunday roast which is always a source of entertainment and mystery trying to work out what is in it! |

You can also fry some pancetta cubes (or smoked bacon lardons which are a lot cheaper) and add them to it after you’ve blitzed so it makes it a bit more filling |

Leek and potato is my go to comfort food, with nice crusty sourdough.
Clean, cut and dry up the leeks till soft. Add the chunky potatoes diced as much as you like... Simmer for 10 and add the veggie stock.... Then boil up till the potatoes are super soft.
Either blend it up or serve chunky.
Best left overnight too... |

I just chuck whatever vegetables are around in, a can of chickpeas and plenty of various spices including a generous amount of chilly. Chilly adds extra warms |

White onion
Yellow onion
Red peppers
Garlic
Savoy cabbage
Carrot
Celery.
I'm going to try to find it again and make it."
It's called peel a pound soup and I had some ingredients wrong
I forgot the stock cubes and there aren't any carrots, but that probably doesn't matter.

Dump soup - lol, wait - named because all you have to do is dump cans in:
2× cans cannellini (or 1× and 1×butter bean)
1× bean and bacon soup (or lentil if veg)
1× can of chopped jalapeño (or chilli) tomatoes
1× sweet corn canned (and 1× hominy (if you find over here in the UK let me know!)) Otherwise 2× sweet corn
2 Cups stock of choice
Oregano, cilantro, salt & pepper to taste (maybe some cumin?)
Add andouille or chorizo sausage (fried) and or bacon
Family fav!

Yes it's fine, skim the fat off once cool.
Use in 3 day if in fridge will last 6 months in freezer.
If it don't smell right bin it! |
