I served it up at a Burns night feast I held for 9 of my mates a couple of years ago. None of us had tried it before and thought it was going to be horrible.
It was actually really nice, and we all really enjoyed it. Not at all what any of us expected.

Och aye, absolutely, ah've been eatin' it since ah wis a bairn
Not strictly a Scottish dish though, since ancient times almost every country had a very similar dish whatever the animal that was being eaten and no part of the animal was ever wasted so a lot of dishes similar to haggis were common.

I organise a Burns Night every year. All the trimmings. Whisky gravy. Address to the haggis. Serve it like a Christmas pudding with a fiery ladle of (blended) whisky set on fire and poured over.

The whole point of haggis is throwing the parts of offal (heart, lungs, liver, kidneys) together with some oatmeal and spices to disguise the offal flavour (see what I did there ) and stuff it all into a sheeps stomach then boil it it, address it before slicing it open and devouring it wi’ neeps and tatties there is nothing in the vegan or vegetarian world that can replace all that. |
