as a singleton I often can't be bothered to cook for 1!

Any one got any quick easy to cook meals for 1?

I was after meals as my diet when I get in is toast...bread and crisps!

Don't have a freezer so it's defo meals for 1...preferably healthy ish

Stuffed jacket potatoes choice of fillings or pasta dishes or get a slow cooker and do some stews or cassaroles x

Why not cook in bulk, and freeze the rest in portions for laters?

Stir-fry is easy for one. Just need to boil some rice to go with it.

Pasta is also good for one, and I can think of a number of sauces to go with different kinds of pasta.

Or my cheats stuffed peppers cut top of peppers and deseed and roast in the oven for 20mins and bung rice fusion of your choice in microwave fill peppers with sai rice and sprinkle with cheese x

Learn to make sauces... steam some veg which is nutritious but dull, pour over a great sauce and you have a great meal of any size you want in 20 minutes.

get a single person slow cooker, leave stews and soups cooking whilst your at work then serve when you get home. perfect in winter especially!

I like to marinade chicken thighs in curry paste, score them first to expose the flesh and bone, and then pan-fried, while I boil some rice and stir-fry some veg to go with it.

Also like to pan-fry salmon, and make a sauce out of soya sauce, sugar, vodka, rice wine vinegar, garlic, ginger and spring onions. Just need to boil some rice and stir-fry some veg to go with it.

Love steak and chips with all the trimmings.

Take away the spuds and you're on to a winner.

Any oilly fish (mackerel or salmon good examples) plus steamed veg (cooked in microwave). Badda bing badda bong!

Try Wok cooking very quick and easy with lots of combinations so there is bound to be something you like or get yourself a slow cooker, stick all the ingredients in before you go to work and hey presto it's all ready for when you get home, lots of easy recipes for both online ...

If you roast a chicken can get 3 meals from a large bird ... First night roast chicken with veg and mash ... keep some back as next night chicken curry get a curry sauce and have with rice .. Next meal.. Put all bones in a pan with onions simmer and after hour take meat that's left off bones add veg .. carrots potatoes thicken with chicken gravy powder .. and make some dumpling can get a packet from supermarket if you cant do home made ..Good filling meals that dont cost loads xx

Well funny enough I went for a stir fry...

tomorrow steak new potaotes with baby carrots and greeen beans in a creamy peppercorn sauce

1. Cook for several and freeze portions as somebody suggested earlier. It is also cheaper.

2. Stir fry is always quick and easy

3. Jacket potato with any kind of filling, ditto

3. Pasta + sauce - you can make a double portion for the next day.

4. Make an arrangement with a friend that one day/ week they cook, the other you do!

Not necessarily quick, but you could make stuff at the weekend that will last all week. Make a chilli, and have it with rice one day, jacket spud the next, etc. Or, make a roast at the weekend and have some two days running, then have sandwiches the next, or maybe the meat with some chutney and crackers.

Failing that, just eat cornflakes every day.

Cook a massive portion of chilli and put into sealable portion sized plastic bags.

Pay attention this is the clever bit......

Tie string around top of the bag before throwing in the local stream. Then fasten the other end to a tree.

Chilli will stay fresh all week like this

You don't need a freezer. I don't have one and I eat fresh every day. Today I had fresh crisps, pork pie and pot noodle.

There is always a stream if you look hard enough. Brooks, rivers, canals, outdoor swimming pools, even ditches work just as we'll. you just need to use your initiative. He doesn't want MacD
