My favourite recipe is the recipe for sticky toffee pudding. Farmers measurements. They know the BEST way to make any sort of cake and I'm not giving it up easily. Sorry not sorry. |

Creamy mushroom pasta:
(quantities depend on number of portions)
Boil pasta of choice.
Fry onion and minced garlic, when onion is half cooked add mushrooms. When mushrooms are cooked add stock cubes and milk. Reduce for a bit then add cornflour and thicken. Add pasta.
For an extra touch drizzle with a bit of truffle oil and sprinkle on some Parmesan.

Try it! I've converted a few mushroom haters with this dish. I find using milk and cornflour instead of cream makes it both lighter and creamier |

It's bougie but it works so well another option is a dash of chilli powder for a little kick. |

Chicken with creamy pasta, tomatoes and asparagus.
.
.
Start cooking pasta, season water.
Chop asparagus and cook in chicken stock.
Dice chicken and cook.
Towards the end add halved tomatoes to the chicken stock and asparagus.
Drain pasta and add the cooked chicken, asparagus, tomatoes and a small amount of the chicken stock to the pasta.
At this point you can do the creamy part how you like. I prefer just adding parmigiano reggiano and letting it melt but you can obviously make the creamy sauce separately to add.

Pork in Stilton sauce
Slow cook the pork, fry some butter, half an onion and 1 clove of garlic in a pan. Add 600 ml double cream and 200g Stilton, salt and pepper to taste and slowly simmer. Add the pork and let simmer some more, and serve with fresh veg. So simple yet delicious. |

A nice healthy fig and rocket salad
4 figs, quartered
2 tbsp maple syrup
3 tbsp olive oil
A couple of handfuls of rocket (arugula)
Half a block of Parmesan cheese or mature cheese of your choice
10-12 basil leaves
Salt and pepper
1. Place a layer of rocket and basil in the bottom of your dish
2. Add your figs
3. Crumble over large pieces of the Parmesan
4. Add salt and pepper.
5. Mix together the oil and maple syrup and drizzle over your salad.
6. Enjoy

Slow Cooker Sweet and cosy lamb.
Brown the diced lamb
Throw in butternut squash, sweet potato and carrots to slow cooker.
Add the lamb
Mix up one of those casserole mixes with water
Add in some all spice or any seasoning or herbs you fancy
Pour over the lamb and vege
Mix in 4 table spoons of marmalade
Pop the lid on and cook on high for about 4.5 hours or low 8 hours.
If you're being healthy you can add in some kale for the last hour of cooking.
It's great to put on the morning before work and have ready when you get home.
You can then serve it many ways. Sometimes I top with Mash or Crispy potato slices and bake for about 20 mins
Sometimes just have it on its own with some greens on the side.

As promised, these are my favoutite spicy meatballs, you can serve with rice or pasta linguine.
Sauce:
• 3 tbsps olive oil
• 1 choped onion
• 1 minced garlic clove
• A couple of bay leaves
• 1 tsp of allspice
• 2 tins of plum tomatoes or passata (800g total) and a tbsp of tomato paste ( squeeze the tomatoes and use juice only if you don't like seeds)
• 1/2 tsp red chili pepper flakes
• 1 tsp ground cumin
• 1 small glass of dry red wine
• 1 tsp sugar
• Salt and pepper to taste
Saute onions and garlic in the oil, put in the spices and stir for a couple of mins then add wine and let it evaporate, add rest of ingredients and simer for 20 mins. Add a little water if needed, if sauce too thick.
Meatballs:
• 800 g minced beef
• 1 onion chopped
• 3 garlic cloves minced
• 1 egg
• 2 tbsps oil
• 3 slices bread soaked in a little white wine
• 1/4 tsp ground allspice
• 1/4 tsp nutmeg
• 1 tsp cinammon
• 1/2 tsp paprika
• 2 tsps ground cumin
• Salt and pepper to taste
Mix together, leave to rest for 20 minutes. Shape into oblong or normal round balls, flour lightly and fry on medium heat in a bit of oil till light brown all around. Put side by side in an oven tray, cover with sause and bake for about 35minutes at 180°. Alternatively just add the meatballs to the sauce in the pan and cook on low/medium heat for 30 mins. When storing do so carefully so you don't break the meatballs.

I am making some pipi piri chicken thighs with sweet potatoes and greens later. And if I feel up to it, will do an apple strudel. A quick cheats version to use up some extra apples |

Pea and ham soup! Just 5 ingredients, ready in 20 mins.
butter 25g
spring onions 6, roughly chopped
frozen petit pois 500g
strong vegetable or chicken stock 600ml
thick-cut ham 300g, chopped
Method
Melt the butter in a pan and cook the spring onions for 5 minutes until softened. Add the peas and stock, bring back to a simmer then cook for 3 minutes. Stir in a small handful of the chopped ham, simmer for 2 minutes then take off the heat and use a hand blender to whizz everything together. Season, stir in the rest of the ham then serve. |

I love spinach pie so I tried it today, delicious.
A pound of frozen spinach (thaw and drain very well), 2 cloves of minced garlic, 1 chopped onion, lots of flat leaf parsley, couple of tbsps of olive oil and dried dill(even better with fresh), couple of eggs and 300g of crumbled feta cheese and some black pepper. No salt as feta is salty.
Oil an oven fish on all sides and keep adding the filo sheets couple at a time brushing them on top with oil. Do this 3 or 4 times. Put the mixture on top of filo and cover with rest of filo on top again two at a time and brushing with oil. Make sure you fold the excess filo from the sides. Brush top with oil and bake for about 50 mins or till golden an crispy at 170° C. Enjoy |

As promised on another thread here is a recipe for mousaka I have tried many times, delicious. You can adapt if you don't like certain vegetables or make a vegetarian version if you substitute mince either lentils.
5/6 aubergines
5/6 large potatoes
6/8 courgettes
Slice all lengthwise to about 1cm thick, lightly salt them and shallow fry till a little golden and pat them dry to remove excess oil. Keep to one side. This is the bit that takes the longest but adds so much to the flavour.
For sauce:
4 tbsps place oil
750g of mince
2 onions and 2 gloves garlic both chopped
1 tin of tomatoes and couple of tbsps tomatoes paste
Glass of red wine
Pinch of cinnamon as well as a stick, couple of bay leaves, salt and pepper to taste (remove stick and leaves when sauce cooked)
Saute the onions in the heated oil, add mince and let it brown a little and then add garlic and let it soften before you add the wine and let it evaporate. Then add rest of ingredients, lower the heat and let it cook for around 30 mins. Keep to one side.
Bechamel:
140g butter
2pints of milk
140g flour
A couple of egg yolks
180g of parmesan or similar cheese
Pinch of nutmeg and a tsp of salt ( add a little more after you taste the cream once you finish preparing as the cheese can be salty too)
Melt butter on high heat, add flour and let cook for minute or two, turn heat down to medium and slowly start adding the milk and keep stiring. When cream is thickened , move away from heat and add cheese, nutmeg and salt. Then add the egg yolks and keep stiring all the time till is all well mixed. Keep to one side.
Start layering your deep oven dish with potatoes first, then aubergines then courgettes, then mince sauce, then remaining of courgettes and then remaining of aubergines. Then top it up with the bechamel, sprinkle with a little cheese and a touch of grated nutmeg and bake at 180° for around an hour. Enjoy.

250g biscuits
300g chocolate
100g butter
125g golden syrup
It's so simple, but the fun part is expirementing with different chocolates, biscuits and flavours.
I used Jammy Dodgers and a spoon full of jam in one batch, and added Baileys (careful with alcohol as it doesn't cook off, so these will be alcoholic) to the biscuit crumb in another.
Smash the biscuits to a bitty crumb.
Break the chocolate into chunks.
Chop the butter into lumps.
Add the chocolate, butter and syrup to a bowl and gently heat (microwave is easiest).When it is warm and a bit melty, mix with a spoon and any lumps should melt away.
Add to the biscuit and mix until thoroughly coated.
Pour into a lined baking tray and flatten with the back of a spoon.
Chuck it in the fridge to cool.
Eat (or take to a social and give away to make friends ) |

Skinny Lasagne
Beef mince browned
Diced onion
Carrots cut up small (if you like them - I don’t)
Courgette - grated
Mushrooms
Tin of chopped tomatoes
Beef stock cube
Jar of bechamel sauce - or make your own but I use Ragu’s

Make up the mince as you would normally
Trim the leeks to the size of the oven dish depending on how big they are, & cut open to form ‘sheets’ - if they need rinsed do it now
Boil a pan of water and blanch the leeks til they are opaque - about 5/6 mins - drain allow to cool
Layer the mince, leeks and bechamel sauce on the top add some slices of fresh tomatoes & sprinkle some cheese on the top and bake at 200c /gas 6 for 30mins
*you can use some red wine if you like.
This is the Hairy Bikers recipe but minus half the ingredients because I’m rubbish at cooking & standing for long periods

Sounds lovely but might leave the leeks out and use something else like courgettes or aubergines or very thin slices of potatoes as not a fan of leeks myself. I am sure will be just as good |

Simple steak triple cooked chips and guinness battered onion rings
Chips. Cut thick. Par boil put in fridge for 30mins. Deep fry on 150 until a light crust starts to form. Fridge for 30mins. Deep fry on 180 til golden
Onion rings. 150g of self raising flour 3 tbsp of cornflour paprika garlic powder salt pepper and then enough guinness to make into a thickish consistency. Coat onion rings in flour then batter mix then deep fry on 180 until crispy.
Steak. Season salt pepper garlic powder and lightly brush with oil. Hot griddle pan cook to your liking
Mushrooms. Fry in butter i then mix beef stock and add to pan and then reduce into a thickish sauce. Really rich but goes well with steak.
Also truffle mayonaise works really well with this. Tesco do a good one.

Like scones, quite crispy and a cherry on top. Made famous by Bettys of Harrogate. Secret recipe but found one on Internet that claimed to be very close to original. I made them and were great and lots more indulgent that scones |

Another thing I like making is jelly sweets
2 packets jelly crystals - any flavour
2 packets of loose gelatine (you can use veggie gelatine if you need too)
1 fat free flavoured yogurt
Mix 1 jelly & 1 gelatine with 300mls (half pint) of boiling water - stir gently until crystals are dissolved - pour into a container, pop into fridge to set.
Mix remaining jelly & gelatine as before then add the yogurt, keep stirring until well mixed in, the yogurt will ‘separate’ in the beginning but will mix as you keep stirring, when done and your first jelly is set - pour mixture on top, back into fridge to set. When set, cut into cubes and enjoy.

Toadstools
Packet of mixed white and pink marshmallows
Smarties
Melted chocolate but not too much
Grease proof paper
Line a baking tray with grease proof paper
Melt chocolate in a bowl over a pan of boiling water - when done…
Dip one end of MM into the chocolate then stand on the lined tray, repeat until tray is filled
Drop a small dot of chocolate on the top of each MM and pop a Smartie on top. Put in fridge to harden the chocolate
Best made with kids on hand too.
This was a Blue Peter recipe in early 80s

Cream crackers
Pink & white Marshmallow
Cut each MM in half and place one of each colour on your cracker and toast, til melted. Probably best to use the grill and not your toaster.

Quite a Scottish recipe here and sure everyone will have their own version. I use a slow cooker.
400g of diced steak
8 beef sausages
4 or 5 carrots
1/2 turnip
3 or 4 potatoes
2 mugs of gravy
1 onion
Salt and pepper, season at every stage.
1 Fry off steak to brown it. Bung it in the slow cooker with the gravy, and the cubed carrots, turnip and potatoes.

"Another thing I like making is jelly sweets
2 packets jelly crystals - any flavour
2 packets of loose gelatine (you can use veggie gelatine if you need too)
1 fat free flavoured yogurt
Mix 1 jelly & 1 gelatine with 300mls (half pint) of boiling water - stir gently until crystals are dissolved - pour into a container, pop into fridge to set.
Mix remaining jelly & gelatine as before then add the yogurt, keep stirring until well mixed in, the yogurt will ‘separate’ in the beginning but will mix as you keep stirring, when done and your first jelly is set - pour mixture on top, back into fridge to set. When set, cut into cubes and enjoy.

Melted chocolate but not too much
Grease proof paper
Line a baking tray with grease proof paper
Melt chocolate in a bowl over a pan of boiling water - when done…
Dip one end of MM into the chocolate then stand on the lined tray, repeat until tray is filled
Drop a small dot of chocolate on the top of each MM and pop a Smartie on top. Put in fridge to harden the chocolate
Best made with kids on hand too.
This was a Blue Peter recipe in early 80s

Here’s an easy one I do often on Saturday night.
Chicken and bacon pasta, garlic bread, bruschetta
Sauce
Medium heat small amount of olive or other oil
Chop up & Fry a large chicken breast
Add chopped bacon about 3-4 pieces
Add garlic - finely chopped , grated or crushed 1-4 pieces
Brown it all on medium heat
Take off the heat
Add a tub of Creme Fraiche , stir in well
Back on low heat stir until hot
Grate in some cheese
Add a packet of fresh basil or whole plant, just the leaves, tear them in halves don’t chop
Stir in well and serve on the pasta
Grate on hard cheese
Fresh ground pepper
Pasta
Wholegrain or white penne
Boil it with a bit of olive oil and salt in
Drain just before fully cooked
Stir in a little olive oil, rock salt , ground pepper, or pesto
Garlic bread
Butter
2-6 garlic pieces finely grated
Curly parsley fine chopped
Olive oil
Salt
Ground pepper
Mix it up
Spread inside a fresh baguette or 2
Wrap in foil
Cool for 20-30
Take off the foil
Cool for 5-10
Serve with a big bowl of good olives, Parma ham, olive oil and a nice Italian red

Chop chilli and add to heated wok, with oil....once sizzling add chopped broccoli and plenty of salt and chopped clove of garlic...takes about 10 minutes

Following on from the doughnuts thread here is a recipe for greek dounuts I had on holiday and are delicious. They are called loukoumades in greek. I thought I give it a go and make them myself. You may want too also.
Mix
1 cup lukewarm water
2 tbsps sugar
2 tbsps yeast
and leave for about 10 mins for yeast to form bubbles.
Add to the above, mix and kneed for 5mins
3 cups flour
1 cup lukewarm milk
2 tbspscornstarch
3 tbsps olive oil
Then cover with a plastic wrap and let rise for at least an hour until is doubled.
Whilst waiting for the dough to rise, make
the syrup using
1 cup honey
1 cup sugar
1 cup water - mix and bring to the boil and then simmer for about 30 mins or so. Then leave to cool.
Frying the doughnuts is easy but be very careful with the hot oil -
• Fill a small pan halfway up with oil (the recipe I followed uses ra peseed oil).
• Heat oil on medium till starting to bubble.
• When the dough has doubled, knock it back and the use your left hand to pick and squeeze some dough forming a ball between your thumb and index finger and use a spoon to pick the ball -the size of a big walnut- and carefully add to the oil and repeat (use a little cup of oil to dip your spoon in between picking each ball from your hand, it helps to slide easily).
• Don't overcrowd the pan, fry the dough balls, turning them a little with a spoon as you go along for a couple of minutes or till golden brown. Take out with a slotted spoon and drain on paper towel to absorb excess oil.
•Dip the hot doughnuts briefly in the cool honey syrup and transfer to a plate.
• When you have finished making them all, drizzle some more of the honey syrup on them, sprinkle with sugar and cinammon and also if you like with crushed and lightly roasted walnuts/ almonds or sesame seeds as I did. Enjoy.

OK let's keep this going, especially as someone might need inspiration for the weekend.
Nice easy version of a more complicated but delicious dish I had many times on holiday as I love orzo pasta. This one is with chichen and rather quick to make and delicious and I am making it this weekend. You can use other meat like lamb or beef pieces but cooking times need adjusting.
Chichen (6 to 8 thighs which I prefer or breast cut in pieces, whatever you like)
1 1/2 cups of orzo
1 onion, a cup of tinned tomatoes and 1 tbsp of tomato paste, a cinnamon stick or 1/2 tsp of ground cinammon, salt and pepper, olive oil, warm water.
Heat a couple of tbsps of oil and saute the onion till soft, season your chicken with salt and pepper and add in and and brown well on medium heat.
Remove chicken, add a couple more tbsps to pan and then your orzo and saute that too and add the tomatoes and tomato paste, and a cup of warm water, put the chicken back and add the cinnamon and salt and pepper to taste.
Turn heat down and cook for around 20 mins, stiring form time to time and, if needed, add another cup of warm water halfway through. Make sure chicken is cooked all way through.
Serve with some grated or flakes of parmezan or just crumble some feta cheese on top.
Delicious, enjoy. |

Brought this recipe back from Bologna, Prosciutto Cream Tortellini.
Simmer your choice of filled tortellini, we use spinach and ricotta, but any works.
Meanwhile, melt 2 tablespoons of butter in a frying pan.
Add 2 mined cloves of garlic and fry for 1 min.
Slice your prosciutto, add to the pan for 5 mins.
Add a tub of double cream, and simmer until it reduces by about half. (Keep the empty tub)
Add a pinch of nutmeg and grated parmesan (about the amount which will half fill your empty cream tub)
Drain your tortellini, but use your empty cream tub to half fill with the water from the pasta.
Add the pasta and water to your frying pan and mix well.
Serve with a rocket, spinach and watercress (pre packed in Asda) and tomato salad.
Very tasty and only takes 10 minutes.

Like scones, quite crispy and a cherry on top. Made famous by Bettys of Harrogate. Secret recipe but found one on Internet that claimed to be very close to original. I made them and were great and lots more indulgent that scones "
I just made these again today as love them so here is a recipe I use for anyone who wants to try. There are scrumptious with or without jam and cream:
250g plain flour and a couple of tsps baking powder, 200g soft butter, 150g sour cream, 90g sugar, zest of one lemon and one orange, 1tsp cinammon (optionsal),65g of each of currants and sultanas, a beaten egg for brushing the top and glazed cherries and blanched almonds for decoration.
Add yeast to flour and tben rub butter in till crumbly, add rest of dry ingredients and mix well. Divide the mix into 8/10 equal size balls (depending how big you like them), arrange on baking tray, press the top down a bit, brush with egg and decorate with 2 or 3 half glazed cherries and same with almonds. Bake in 200° for 15 to 20mins till nicely golden on top. Cool and serve as you like. Enjoy. |

Crab and hot sauce with noodles.
Buy picked white crab (or cook your own).
Prepare noodles.
Make sauce:
Oil. Teaspoon of Cayenne pepper, good dash of Worcestershire sauce, splash of dark soy sauce, pinch of black pepper, squeeze of tomatoe purée.
When done put in a small gravy pot and eat with the crab and noodles. |

Jamie Oliver Spinach & Feta Pie with filo pastry is a little fiddly but it's delicious!
On the Jamie Oliver website - Chilli Con Veggie. It's basically just beans with lentils and spice and I serve with rice. Freezes really well. Very filling and 3 of my kids love it. |

I put lots of fennel with the spinach or some fennel seeds, lifts the taste. And yes some lemon will also do that too. |

Simple beef stir fry for tonight.
1lb steak thinly sliced
A couple of tbsps of vegetable oil
A couple of tbsps of cornstarch
A bag of your favourite stir fry veg.
Season beef with salt and peeper and coat with cornstarch. Heat half of the oil in pan or wok and cook the beef in three batches for about 3 mins each and take out and set aside. You do it in batches so that it fries well otherwise might steam and not be crispy.
Heat rest of oil and do the same with the veg for about 5 mins take out and set aside.
For the sauce: Mix together a tsp of ginger and 3 cloves garlic both finely chopped or minced. Add 3 tbsps brown sugar and a couple of tsps of sesame oil. Also a third of a cup of each of orange juice and water, and about 5 or 6 tbsps of soya sauce. Put all the sauce ingredients in the pan and bring to simmer. Disolve a tbsp of cornstarch in a little water and slowly add to the sauce stiring for a couple of minutes till is thickened. Add your beef and veg back and cook till all heated through.
Serve with rice or noodles and sprinkle some toasted cashew nuts or sesame seeds on top if you like or some chopped coriander. Enjoy |

But when ever I try out a new Italian restaurant my go to dish is their carbonara, and I judge how good the restaurant is on how good their carbonara is.
One of the best I have had recently is when I went to Gino D’Campo’s place in Manchester. I offered the carbonara with tagliatelle. It was very, very good |

But when ever I try out a new Italian restaurant my go to dish is their carbonara, and I judge how good the restaurant is on how good their carbonara is.
One of the best I have had recently is when I went to Gino D’Campo’s place in Manchester. I offered the carbonara with tagliatelle. It was very, very good "

chicken breasts chopped
egg yolks
50/50 tomato ketchup and sherry(sweet)
good splash of lea and perrins
dunk the chicken in the yolks and fry
they ll look like they ve got a chinese batter
just before finished cooking throw in the rest of the liquids bring to a simmer serve with rice. you ll look like a food god/goddess |

"Simple beef stir fry for tonight.
1lb steak thinly sliced
A couple of tbsps of vegetable oil
A couple of tbsps of cornstarch
A bag of your favourite stir fry veg.
Season beef with salt and peeper and coat with cornstarch. Heat half of the oil in pan or wok and cook the beef in three batches for about 3 mins each and take out and set aside. You do it in batches so that it fries well otherwise might steam and not be crispy.
Heat rest of oil and do the same with the veg for about 5 mins take out and set aside.
For the sauce: Mix together a tsp of ginger and 3 cloves garlic both finely chopped or minced. Add 3 tbsps brown sugar and a couple of tsps of sesame oil. Also a third of a cup of each of orange juice and water, and about 5 or 6 tbsps of soya sauce. Put all the sauce ingredients in the pan and bring to simmer. Disolve a tbsp of cornstarch in a little water and slowly add to the sauce stiring for a couple of minutes till is thickened. Add your beef and veg back and cook till all heated through.
Serve with rice or noodles and sprinkle some toasted cashew nuts or sesame seeds on top if you like or some chopped coriander. Enjoy "

Simple recipe for a chicken pasta bake.
Heat 1 tbsp of oil in a pan. Slice 4 chicken breasts in strips and fry for 6 mins or do till the chicken is cooked through and put to side.
Heat 2 tbsp of the oil over a medium heat and fry 2 finely chopped onion slowly fo about 10 mins , add 2 crushed garlic gloves and 1/4 tsp chilli flakes and cook for a futther minute or two. Add 2 tins of chopped omatoes a pinch of sugar and salt and pepper to season. Simmer for 20 mins or so and add 5 tbsps of mascarpone and put to side.
Cook 350g penne or similar pasta. Then add the pasta to an oven dish, add in and stir the chicken, pour over the sauce and top with lots of grated cheese like cheddar and some mozzarella too if you like. About 150g cheese in total is good though I like a bit more.Add a bit of grated nutmeg on top. Bake in 200°C for about 20 mins till golden brown on top. Enjoy. |

Time for a new one, please add one of yours too. This one is for an easy one pot beef and wine easy and relatively inexpensive casserole for when I fancy a quickie but tasty hearty meal. Enjoy.
Heat a deep pan, with a bit of oil and add an onion finely chopped and 3 or 4 sliced carrots and fry for 5 minutes until a little soft.
Add a few chestnut mushrooms or any others you like and a couple of crushed garlic cloves and fry for a few more mins.
Then add about a pound and a half of diced shin beef and a couple of tbsps of each of flour, Worcestershire sauce and tomato purée. Brown the meat on high heat, add about around 250ml of red wine and let reduce for a couple of mins before adding 400ml of beef stock (you can use a good cube to make the stock) and some fresh thyme and salt and pepper to season.
Bring to the boil and then turn heat right to bare minimum , put the lid on and simmer for about 3.5 hours but stiring it ocassionally (every 30 to 45 mins should be fine). Check beef is nice and tender and add more seasoning if needed.
Serve on a plate of good mash potatoes or can you use jacket or any sort of potato or even rice if you like. Delicious. |

Just made an olivier salad to accompany some fish so thought I put the recipe on. I love this salad and so easy to make and to be honest, the measurements don't have to be exact. Just mix all ingredients together and serve.
--3 medium potatoes and 3 medium carrots, both boiled till tender but not too soft and cut into small cubes.
--5 hardboiled eggs - cut in small cubes.
--1 sweet onion (optional) also cut into small pieces
--1/2 cup of chopped pickles like gherkin ( throw in some capers too) --1 can of tinned peas
--3/4 cup of diced ham (optional if you don't eat meat)
--3/4 cup of good mayonnaise
--Some finely chopped dill (or parey), to garnish |

A nice simple recipe for an inexpensive frittatta. You can improvise and add your own stuff too.
• Put a tbsp of oil in a frying pan over a medium heat. Add 3 or 4 skinned and roughly cut sausages and a tsp of smoked paprika and fry for a minutevor two. Add a thinly sliced red pepper and cook till just softened. Tip everything on a plate and set aside.
• Add a bit of oil to pan and some sliced partly boiled potatoes (can use a tin of well drained and sliced new potatoes if you like but be carefull as can pop/splash, especially if not well drained) and fry for a minute or two.
• Beat 6 eggs, season and pour them into the frying pan and stir. Lower the heat and cook for 3 or 4 mins.
• Addd a sliced tomato some frozen peas and a bit of grated cheddar. I like lots of cheese and add some parmesan too.
• Add the sausage mixture and bake for around 8 mins in a preheat oven at 220 degrees or if you feel brave just use a plate to turn the frittata over and back in the frying pan for another 3 mins or so or till golden brown.
Delicious. Serve with salad and garlic bread.

Stuffed chicken bread - made today, delicious.
Mix together ½ cup of each crumbled feta cheese, chopped roasted red peppers, chopped fresh spinach. Add ¼ cup of chopped Kalamata olives, a tbsp chopped basil, a tbsp chopped flat-leaf parsley, a couple of minced cloves of garlic, salt snd pepper
Take 4 boneless, skinless chicken breasts, cut a horizontal slit and stuff them eith the mixture. Then sprinkle with a bit of salt and pepper and fry in heated pan with a little oil for 2 or 3 mins each side. Transfer to an oven dish and cook at 165° for about 25 mins. Check is all cooked and drizzle some lemon juice on top. Great served with some couscous ( as I did) or some roasties and veg |

I make like a Mexican lasagne with home made chilli con carne and tortillas for sheets, topped with sour cream, tortilla chips and cheese. Always a winner in my house.

It has been a while so time to add some more. Today its lemon and herbs roast lamb and potatoes. Not made it for a while and looking forward to it. Delicious and very easy to make.
Ingredients
A leg of lamb, 1 to 1.5 kilos of potatoes, 2 tbsp mustard, 2tbsp of honey, 4 tbsp good olive oil, 2tbsp oregano, zest and juice of 2 lemons, 2 to 3 cloves of garlic, a chicken stock tube, couple of rosemary sprigs (leaves only) and salt and pepper.
Preheat the oven to 170°C. Cut the potatoes into chunky pieces, add to a dish and the lamb on top.
Beat all of the rest of the ingredients well in a blender to make a marinade and spread well on the lamb and the potatoes.
Add around 250g of water to the dish and cover with greaseproof paper and aluminum foil.
Bake for about 3 hours, then uncover and bake for a further 30 to 40 mins. Enjoy

2 tablespoons balti curry paste
200g tin chopped tomatoes
200ml chicken stock
Onion n garlic in the pan, when the onion starts to go clear add the chicken, potatoes and ginger. Cook until the edges of the chicken brown.
Add the tomatoes, stock and balti paste.
Simmer for 20, stirring as n when.
Serve with whatever the fuck you want. |

We have not added anything for a while so here a recipe for BEEF GOULASH. Please add a recipe of your own and get inspired by some recipes already on here.
1kg steak cut in cubes, 3 onions cut in wedges and 3 crushed garlic gloves, can of chopped toms and 2tbsp of puree, a green and a red sliced pepper, a beef stock cube, couple of bayleaves, 2tbsps paprika, glass of dry white wine, 500ml water.
Heat a couple of tbsps oil in pan and brown meat with a sprinkling of flour and season with salt and pepper. Remove meat, add a couple more tbsps of oil and soften the onions, garlic and peppers.
Add all ingredients into a pan and bake for around a couple of hours on preheated 170°. You may need a little longer for a more tender meat - just check. Alternatively cook on the hob for around 90 mins but remove lid after 45 mins and keep checking. If at any stage is getting dry, add a little bit of hot water.
Serve with your favourite rice, a dollop of sour cream or creme fraiche and a sprinkling of chopped parsley. Enjoy

0.5 tsp italian herbs (mixed herbs is fine)
0.5 tsp Garlic powder
0.5 tsp Onion powder
0.25 tsp Cayenne pepper
1 tsp salt
0.5 tsp black pepper
Mix all together until well mixed, be as rough as you like to ensure there are no air pockets and the mix is as smooth as you can get it.
shape into loaf (ish) and rub a thin layer of olive oil then wrap in tin foil.
cook in 180 Deg oven for 1hr 20mins.
make a good sauce to go over it:
6 tbsp Ketchup
4 tbsp water
1 tsp mint sauce
Chilli powder to taste
pinch of salt
Add the chilli powder a little at a time tasting until you think its right.
these are from a boook called the Takeaway Secret.
