Yes. Slices of carrot using a cheese slicer straight into the sauce. Delicious and adds an extra crunch. Courgettes too

I grate carrot & courgette as well as finely diced celery & red pepper into most mince based meals..

The veg kind of disappears and it was a way to get extra veg in when kids were little.

If we're making our own sauce yes with other vegetables. They all go through the food processor so the kids can't see them. But not lumps.

My mum used to put sweetcorn in bolognase when I was little. Only when I grew up did I find that was not what most people do

Yes I do. I use a recipe from an Italian Cookbook. One carrot, one stick of celery and one onion, all diced. Add garlic, minced beef, beef stock, red wine, chopped toms, parsley and two teaspoons of sugar. Simmer uncovered for 1hr30mins.
