Boxing Day - ideas for Lunch/Dinner
Jump to: Newest in thread
I have family visiting for an overnight stay on Christmas Day. But I'm struggling for inspiration on what to feed them on Boxing Day. Something which is light but satisfying and not necessarily related to turkey leftovers from the day before.
Where are my fellow epicures on here? |

Coronation chicken in baked potatoes with side salad, tasty, nutrition and filling but not overly or hot roast beef baguettes with fried onions and mushrooms, both are quick easy and tasty |

"What about a charcuterie selection board and buffet nibbles "
This is a very good shout! When in doubt, stick it on a table and call it a grazing table. You could do so much - roast turkey sandwiches for those who like the nod to yesterday's celebration. A huge cheeseboard with lots of pickles, breads, olives and that kind of thing. Chips. You have to have chips and mayonnaise.
A beautifully arranged serving board with brownies and blondies all around a giant fruit pavlova.
My grandmother used to do a big pot of something in the slow cooker as well and then lots of sides for people to choose as well; like a chilli would have some homemade guacamole, tortilla chips, mini bowls of rice, salad. Or salmon wellington, presliced with cold potato salads, gherkins etc.
I really love hosting so err on the side of being over the top. I've dialled it back here.

A nice charcuterie, a cheese board, range of chunky pickles, few dips and few different breads, baguettes crusty rolls, soda bread etc. A nice big pavlova for after. Very enjoyable and hardly any effort needed |

Thank you all for your delectable and kind suggestions!
I'm veering towards the Charcuterie smorgasbord and, being a turophile, a generously guilt-free selection of cheeses.
A wintry warm pea and ham soup would be lovely too, as someone suggested.
