An ex chef I know bones his bird they sous vides it, smokes the legs and recombines on the day into a Masterchef turkey winner.
Do you just shove yours into the oven with a bit of bacon on top or do something more interesting? |

Ive made a garlic butter last weekend.
i just get a freerange turkey crown from the butchers,
Coat in garlic butter, add thyme, salt, and 2 pinches of rosemary. Then stick some water in the tray the remaining garlic butter, ground arrowroot then tinfoil the tray |

Put a load of butter between the skin and the flesh and a load of bacon over the top. Pack the cavity with a clementine, a lemon, celery and carrot. Sit the bird on top of veg, add enough stock to just reach the top of the veg, cover in foil and stick in the oven. |
