I get asked to make this creme caramel time and time again, the texture and flavour are both pure luxury and like nothing you can buy in the shops. First time I ate this I almost polished the whole thing off! Recipe looks complicated but it's really quite simple.
Creme caramel
Melt 1/2 cup sugar in a dry frying pan on medium heat until melted and caramel coloured. Be careful it doesn't burn and stir only when it starts to melt. Pour carefully into a large Pyrex dish/bowl or non stick loaf pan and then swirl the caramel around the base and up the sides of the dish a little working quickly before it hardens.
Meanwhile put into a jug blender:
1 pint full fat milk (use gold top milk for extra luxury)
1 can condensed milk
3 large or 4 medium eggs
Blend until smooth and pour onto the caramel. Set the oven to 150C and put the dish into a roasting pan then fill with boiling water. Carefully transfer to the oven and cook for 40mins. It's ready when a toothpick inserted into the middle comes out clean. Let cool then refrigerate overnight or at least 8 hours. You'll wish you made 2! |
