Wots the main course? If we know that perhaps some budding chefs out there can advise a complimentary starter to wet the appetite for the main n then an equally complimentary Pud to finish the meal off nicely |

By the sound of the mains you an accomplished cook. Why don't you do some seared scallops, a smooth pea purée and make some bacon dust. Garnish with pea shoots if you can get them or some cress if you can't x |

"BACON DUST ??????????????????????????? Whats that ??????? lol sounds immense"
You basically de-hydrate some pancetta or other thinly sliced bacon in an oven at a low temp for a few hours, then grind it in a pestle and mortar. Because its dehydrated it goes really intense. You can use it as a seasoning for almost anything x |

Well here's some ideas;
STARTER
Wild Rice Cranberry Pecan Salad
The wild rice binds together the sweet flavor of the cranberries and salad dressing and the natural crunch of the pecans represents a change in texture from the pork. The salad is chilled before serving, a temperature contrast technique to bring out the flavor in both dishes. Pour a mixture of lemon juice, olive oil, sugar, salt, pepper and grated orange peel over the chilled rice mixture immediately before serving it.
PUDDING
Apple crumble
A simple British classic with the apples to compliment te pork from the main. The serve with lashing of hot custard, or lush whipped cream, or even play with the palette more by using vanilla ice cream to ad another texture to the dish

Was going to suggest this. Make it all in advance and seat scallops at last minute.
Use prosciutto ham if you want the contrast of a salty but snappy ham. Just grill or shallow fry for a few minutes. Then sear scallops in same pan for flavour.
Desert wise you should make something cold for overnight. Biscuit based cheesecake?
Digestives and ginger nuts in a blender. Then buy cream cheese and cover. Then you can dress and serve with anything. Or do a raspberry coulis to cut threw. Maybe grate a lemon zest and mix threw cream cheese. |
