Yeah I've heard both been used.

One trip being exactly as you say. Was good for one use.

Though the more common and often one used is one trick pony which is useless at everything except one thing.

It is from a circus term I think. A circus pony that only learned one trick.

I knew of a horse that could do anything for 25 nicker. It loved a pony..
