The whole MILF appeal was never originally about them actually being a mother it was sort of just started in high schools (US) and popularised as a phrase through American Pie.
The age of the people saying it were just sort of referring to a sexy/hot/attractive parent (mother of course) of a fellow student/friend.
Now with it being mainstream it just sort of gets used however the user wants to to be implied.
Essentially for me it just sort of comes down to (not that I use the term much, if at all) - I would like to fuck you, you just so happen to be a mother.

I loved all those replies.
To me it's pretty straightforward.
Most mums are sensible, practical and you can have a proper conversation with a sprinkle of laughter. That's the appeal to me.
