"Cupboard - there’s enough vinegar and salt in sauce to preserve it till the end of days "
Ah, except there's certain types of thermophilic bacteria that can survive all so once oxygen is readily available (bottle is open) ...then chilled is best |

In all my years I’ve never put ketchup or any sauces in the fridge apart from Mayo and salad cream. Some put jam in the fridge too. Makes my toast cold! |

Creamy/white sauces - Fridge
Everything else - Kitchen Cupboard.
I felt the distinction of Kitchen Cupboard was important, because many others said "Cupboard" and I have visions of other people's bedroom and lounge cupboards stuffed with Daddies and HP sauce bottles.

Off the internet....
What the experts say: HP Sauce contains preservative ingredients including both malt vinegar and spirit vinegar, so it's fine to keep in the cupboard, along with your ketchup. Dr Schenker says: 'It's vinegar-based, so keeping it in the fridge isn't necessary. '28 Feb 2020 |
