"Since my discovery that the Fab Forum is the font of all knowledge, I have found myself seeking answers here. May I ask if anyone knows how to roast chestnuts perfectly? What is the secret? I have tried it, with mixed results from utter failure to ‘wow! This is perfect’ but can’t seem to repeat it. How difficult can it be to simply roast a nut, consistently??? ![]() ![]() try tossing them in a very hot pan with little or no oil, I used to buy them from street vendors in budapest prepared that way (although they were doing it over coal). Worth a try tho

" They're hard to find nowadays, it seems. I've been thinking of stirring them in hot sand, just to try it. ![]()

"In the house growing up we had a open fire and a chestnut roasting pan. Score them and put them over the embers… delicious ![]() I see. That makes sense!! Cooks it evenly throughout. That has been my trouble, getting it to cook throughout the whole nut.
