Tea contains tannin. The longer it is left or if heated the tannin concentration increases. Tannin is bitter.
Use a tea that brews slowly (like Darjeeling) and with large leaves.
If you've ever had chai in India, that is stewed with lots of sweetened condensed milk to sweeten it. Some like it. Not me. |
