In Europe that you don't need hiking gear and guide for
Ideally something above 2500m
Having done Snowdon and scafell pike this month left me hungry for something that's not a walk in the park |

There are many routes up Snowdon, which did you take OP?
If you didn't do the horseshoe then start at Llanberis car park and traverse Crib Goch on your way to the peak and carry on round up Y Lliwedd, its an awesome full day but a long one. Crib Goch though isn't for the faint of heart...
The better climbs though can be found in the next valley on the A5 from Capel Curig to Holyhead. All the mountain routes can be started from the climbers center in the Ogwen Valley to include Tryfan, Glyder Fach and Fawr (Do all 3 in a day and check out the castle of the winds...) and on the other side of Llyn Ogwen Carneddau Dafydd and Llywelyn.
I've climbed most 3000ft and over in England and Wales as well as the Cairngorms and around Glencoe in Scotland but for me there's nowhere like the mountains in the Ogwen Valley |

Look at moving to scrambling, makes new routes possible and adds a lot to it.
Dolomites in North Italy are really good as you can do walks, more adventurous hikes/scrambles and for real thrill a Via Ferreta (which which do need guide for but I really am looking forward to getting back to doing them soon). |

Plenty in Britain (especially Scotland) that are way harder than Snowdon or the Pikes.
Liathach and An Teallach and the Cuillin ridge are enough to test the hell out of the hardest. I've only done the first, on a glorious summer day and dodged the worst of the pinnacles, but it was still the most memorable mountain day ever. |

Try the hike from Capal Curig to Pen Y Pass via Glyder Fawr. A great walk with next to no one up there. PS great lake for a a bit of fun too.
You can sit on top of Glyder Fawr watching the ants climb up Snowdon.
Then get the bus from the mountain rescue place back to CC. |
