... to cook a chicken?
I like mine simply roasted, perhaps with lemon, garlic and parsley butter smothered on the skin, with freshly ground pepper, and no stuffing except for half a lemon.
To be eaten with roast potatoes, stir-fried veg, and just a drizzle of pan juice on the meat once carved.
A leg and both wings for me.
Then I shall strip the remaining skin off and eat myself, and then strip the meat for the pets and myself for laters.
The bones will go into a pot to make stock for soup.

Another way to eat chicken, is BBQed, thighs or drumstick, scored to expose the meat, then marinated in one of Patak's curry pastes, I like to use Balti or Madras, and then BBQed to perfection.

Or chicken satay.
Diced chicken, I usually use thighs, marinated in my own take on a Thai marinade, skewered, then BBQed or grilled, to be eaten with my own home-made satay sauce.

Something I do not cook myself, however, it is one of my favourite dim sum, which is braised chicken feet.
Chopped the claws off first, then deep fried, and then braced in a rich soya based sauce with ginger, garlic and spring onions.

served with roasted spuds,carrots, cabbage and lashings of proper gravy,

Another take on the chicken feet, allegedly Thai-inspired, which is garlicky pickled boneless chicken feet, eaten cold.
It did not sound too appetising even by my "eat almost anything" Chinese standards, however, it was delicious!

Trust the Chinese or whichever oriental country that first thought of it, to come up with deep-fried chicken cartridges, very tasty with a cool glass of Tsingtao beer!

With cold roast chicken, chicken mayo with a twist by adding spring onions, toasted sesame seeds and oil, and a dash of chilli oil and plenty of freshly ground black pepper.

As a small child that was my daughters favourite meal, I had to make them from scratch as she wouldn't look at shop bought ones.
I remember with embarrassment her pointing out to my mother that she was sure hers were nice but she wouldn't try them as they were not "real" ones like I made. |

A good way to cook a chicken is to spatchcock it...
you cut it along the backbone, open it out and squish it open!! you can then season with herbs, I use tarragon, some lemon juice, and season it...
You can then roast it fast and hot!!! |

Whole poached chicken.
Not something I would do myself, however, when do properly it is delicious.
The poaching liquid is flavoured and spiced with the usual suspect in Chinese cooking.
If the bones do not show red when chopped open, it would be overcooked!
Not something you see often in restaurants in the UK though, due to health concerns etc...
To be eaten with garlicky oyster sauce. |

Hand-shredded chicken breast meat, mixed with a sauce made out of sesame paste, soya sauce, chilli oil, toasted sesame oil, sugar, with a hint of chopped raw garlic.
Serve on a bed of cold rice ribbon noodles.

Lemon chicken.
Flatten a piece of chicken breast.
Dip in milk then coat in seasoned breadcrumbs and fried.
Make a lemon sauce out of lemon juice, sugar and thicken with corn flour, and coat the chicken breast with it.
Serve with sauté potato and a crisp green salad.

oh pearl i so shouldnt have read this my cooker is broken and i only have the one camping stove with no gas but am now so hungry i will be bugging my landlord to replace it tomorrow morning at 9am so i can try at least one of these ideas of yours |

The BBQ chicken with Patak curry paste can easily be cooked using a camping stove, do that all the time when I go camping when it is raining outside.

Southern Fried Chicken.
Too much hassle for my liking, however, the result was definitely worth it, as it was very different yet as tasty as KFC's!
Soak the chicken pieces with skin on in milk for at least 24h.
Retrieve from milk, and coat in seasoned flour.
Fry in low heat until the skin in crispy and nicely browned, turning occasionally, which can take as long as an hour!
The meat will just fall off the bones. Lovely! |

Sweet and sour chicken.
I prefer the pork version, and it is not something I would cook at home as it is too much hassle and difficult to make well properly.
Dice the chicken in chunks. Coat in batter and deep fry until done.
While the chicken is cooling, make a sauce using tomato puree, vinegar, sugar, so that it is very sweet and very sour, thickened with corn flour.
Stir fry some garlic, ginger, spring onions and sliced green peppers, with a bit of chilli if a bit of heat is desired.
Drain a tin of diced pineapple, add to the sauce, along with the fried vegetable.
Add the fried chicken pieces to the final sauce, and serve immediately, so that the batter is still crispy and not soggy when eaten.
I do not order sweet and sour dishes from take aways, as I find their sauces too limp for my liking.

Last one before I go to bed.
Chicken kebabs. Prefer the lamb version myself though.
Marinade diced chicken in a mixture of Greek yoghurt, mint, lime juice, chopped garlic, chilli and parsley.
Skewer the marinated meat between onions, add sliced peppers or a suitably sized mushroom in between the onions if desired.
BBQ till done, brushed with the marinade from time to time.

Not for the faint hearted, or the calorie counters.
Stir-fried chicken skin with black beans and garlic!
My dad used to collect chicken skin and keep them in the freezer until there was enough to make this dish worthwhile.
Very simple, just crush some fermented black beans with garlic to form a paste. Add a bit of chilli if some heat is desired.
Stir fry the paste in a wok, then add the skins that have been cut into pieces until crispy on the edges.
Add salt to taste.
Serve with steamed rice, and stir-fried vegatables.
