Way over Yonder, that's where I'm bound

What spice(s) must you have in your store cupboard and what is your signature dish for it?

Mine has to be cinnamon - fruit crumbles are not just not the same without it.

Cayenne pepper, adds that little bit of spice to what could be a bland dish otherwise

I put herbs and spices into most things. Even hot milk tastes better with a grating of nutmeg or cardamom in coffee.

Ive got about 30 herbs and spices at least in my cupboard. When i went shopping id forget which ones id got.

So what ive done is written a list and stuck inside the cupboard door, so if i want to use some i know which ones ive got without emptying them all out and then finding i havent got the one i want lol. I tend to use them lots and stock cubes

when it comes to spices it has to be allspice... you can use it in so many things..

herbs... well dried only one I depend on is a pot of mixed herbs in the winter...

I grow fresh herbs, and freeze spare in plastic bags crumbled up.

a tip if you have freezer space.. if you dont have space to grow your own, look out in supermarkets at the end of day for reduced cut herbs, pop them in a zip lock bag and freeze, you can then crumble them in the bag and use a pinch at a time :D

Cumin, coriander, Chinese 5-Spice, cinnamon and paprika are the ones I normally keep.

Favourite herbs are parsley and coriander.

I use spring onions a lot, also garlic and ginger.

And I always have onions in the house.

BBQs are my favourites, and I make all my own marinades, except for Patak's curry paste which I use on chicken thighs.

Paprika has probably got the shortest shelf life. But if you keep them in those clik lok tubs in the dark they will last a bit longer. Brands make a big difference too. Always go for good quality like East End, Rajah or Supreme. Not the supermarket rubbish

We've got pretty much every spice you can think of in ours except Pimento, just can't find that stuff anywhere.

Waitrose but even then only the more urban branches. You might be the only people in your area seeking pimento.

There used to be an online company called fox's spices. They did mail order and were awesome. I don't know if they still exist though.

Fox's spices - still exist but no website. Easy enough to find their details online and call them to request a catalogue.

I can't recommended them highly enough.
