It'll have something to do with milk proteins and heat, probably. And it has a high fat content. Fatty things are yum, when heated, just ask bacon.
Alternatively, find a grown up and ask them. |

The cheese tastes better melted, because the fat molecules normally held in suspension within the matrix have been liberated by the heating process, rendering more of them available to the taste buds within the oral orifice.
Normally mastication and saliva would liberate some fat molecules, but heating accelerates this process. |

You pay more and get less cheese and less choice!
You miss out on the whole ratio relationship!

And inversely the milder the cheese, the easier it is to release those lovely flavours and better taste.

Nooooooo you need to make it yourself
Grill bacon, bake the croissant in the oven when it's nearly cooked slice it and add the cooked bacon and Grated mature cheddar inside the croissant.
Wait for cheese to melt - eat - and roll eyes in ecstasy

"Hard cheeses do... I hate hard cheeses if they aren't melted... I like brie... Is stilton a hard cheese? If it is it's the only one I like unmelted "
It is a semi-soft cheese (Throws a piece of chalk) Stop laughing at the back of the class.
One copy and paste later
Blue Stilton
Country of origin England
Region, town Derbyshire, Leicestershire, and Nottinghamshire
Source of milk Cows
Pasteurised Yes
Texture semi-soft, crumbly, creamier with increasing age
Aging time 9 weeks minimum
Certification PDO[1]
Stilton is an English cheese, produced in two varieties: Blue, which has had Penicillium roqueforti added to generate a characteristic smell and taste, and White, which has not. Both have been granted the status of a protected designation of origin (PDO) by the European Commission, requiring that only such cheese produced in the three counties of Derbyshire, Leicestershire and Nottinghamshire may be called "Stilton". The cheese takes its name from the village of Stilton, now in Cambridgeshire, where it has long been sold.
Round the corner from me...well almost. |
