I like cheese sufficiently (and know a fair bit about the food and beverage industry) to have invested some of my hard earned cash in a Northern Ireland cheesemaker.

or any ripe Brie will do for me. Although a nice bit of mature cheddar on a cracker is delightful, not to forget a good tongue tingling Stilton 
although I am not very lactose friendly these days so only treat myself at certain times of year (like Christmas)
As for salads I’m all about the feta cheese, sometime I might grill or bbq a bit of halloumi then smother it in pesto
