What do you like to cook?

We are struggling for inspiration on what to cook today. Hoping that the forum can share what they usually do with chicken to give us some new ideas?

Usually we end up making curry / enchiladas / fajitas etc. It’s just too samey and it’s time to be a bit more adventurous. Help us please?

Chicken what? Whole, breast, leg, diced, etc. Skin on, boneless ... give us a clue.

Most of my meals consist of a ping to say when it’s ready.....so I can’t really comment and I won’t be a contestant on Masterchef anytime soon lol

Vegetarian stew slow-cooked in crockpot:

Potatoes, onions, carrots, turnip, parsnips, tomatoes, broad beans, haricot beans, lentils, marrowfat peas, barley mix and vegetarian bouillon.

Chicken ramen! Decent broth, some delicious noodles and a soft boiled egg. Absolutely perfect.

I also like doing chicken paella

- chicken shawarma with toasted pitta and homemade tzatziki

- chicken burrito bowl which is all the things inside a wrap but artfully arranged in a bowl (so avocado, chicken marinated in a paprika oil rub, black beans, rice, coriander, sweetcorn and baby red peppers).

Slow cooker spag bol. 500g of 5% fat mince (raw, no need to brown), carton of pasta and one of those Coleman's powder mixes. Leave on low for 8 hours and it's bloody lovely. Next day, chuck in some chilli powder and a can of kidney beans and you have a con carne. M

Little butter in saute pan, melt. Add 1 crushed garlic clove per breast, 1 bruised rosemary twig (bashed with rolling pin). Gently fry for 1 minute. Add chicken breast, fry gently until all sides white ( no browing). Add a glass of wine per breast and a sprinkle of salt. Bring to simmering boil, turn down heat to lowest. Cover with cartouche (baking paper round), add lid. Leave to simmer for 20 minutes (or fully cooked). Remove lid and cartouche. Remove and reserve breasts. Reduce remaining liquid by half. Add 1 tablespoon of cream per breast, stir and bring to boil. Turn of heat and season. Plate chicken (good with potatoes or pasta shapes). Pour sauce through a sieve over the chicken.

(Forgive typos watching really really bad film ... so funny)

If going curry I like to make a butter chicken curry with pineapple to bring out a nice sweetness to it.

Or could go for homemade kebabs and get lots of veggies and side dishes with it like salads, or even quiche.

Or a good old cream of chicken pie is always a winner, with leeks and maybe jam hock in too.

We eat a lot Mediterranean inspired food.

I love making paella its a faff but worth it.

There are some good recipe ideas on Tesco website at the moment that I'm going to try too.

Get some chicken thighs, chorizo, red onion and potatoes.

Place the thighs diced chorizo, 1/4 cut potatoes and diced red onion into a baking tray and splash a bit of oil over the potatoes and thighs. Cook for about 20 minutes then add a glass of wine to the tray and cook for another 40 mins or until the potatoes and chicken is cooked and the skin is crunchy

I switch the chicken stock with tbsp of sherry, tbsp of soy sauce and tbsp of water.

Yes it's amazing then just add some tenderstem broccoli as well
