Medium rare. Used to have it medium well, to avoid the bloody plate, but under cooked one for myself one day, too tired to bother throwing it back in the pan, and it was soooo much better.

As someone who used to only have his steak 'cremated' I once said in a steak restaurant that I'd have it 'as it comes'

Medium rare,and no stupid little 8oz things, 16oz at least.

Pub near me still has my picture on the wall from 20 years ago as I was the first person to finish their 96oz steak with 16oz of fries and and 16oz of onion rings
