I'm gonna make one this weekend, got some smoked Haddock and Cod etc, in ma freezer, probably gonna chuck in a few prawns and mussels.

Has anyone got any good recipes?

Simmer the fish in water until colour changes and its firm. Take out the fish.

Put decent spuds into that water and boil till soft. Try to use only enough water, to keep the flavour.

Make a basic roue, white sauce but add a small amount of cheese.

Get a baking dish, put in the fish then the sauce, then the mashed spuds. Then bake.

Poach your fish in milk, with onion, bay & peppercorns.

Sieve it then use the milk for the sauce.

Gently fry off some finely chopped onion and carrot

Poach fish in milk until tender

Remove fish and add milk to onion and carrot

Add two generous handfuls of grated mature cheddar to sauce

Season with pepper (there should be enough salt in the cheese already)

Mash potato with milk, butter and cheddar

Add fish to sauce for 2 minutes

Put fish and sauce into dish

Cover with mash

Sprinkle cheddar on top

Put in medium oven until golden on top

It’s all in the bechamel sauce, leeks are good, sauté them first obviously
