Sorry don't really have any, why has it suddenly become popular again, bit like pulled pork a few years ago. Doesn't do a lot for me just macaroni cheese with a new hip name

Calling it mac and cheese does grate on me a bit (I'm hilarious me) in the same way that calling spaggett bolognese "spag bol" sets my teeth on edge. But I'm old and all these new fangled phrases just confuse me

I saute chopped onions, smoked bacon and sliced chillis in butter before adding to the roux.

Vintage hard cheddar for the sauce and grated parmesan (plus sliced tomatoes) on the top before the who;e thing heads into the oven for 40 minutes.

My epic macaroni cheese involves at least three different types of cheese (taleggio, cheddar of some sort and gruyere), cream in the roux instead of milk, mustard powder and nutmeg.

It's rich though and if I'm feeling like I need true comfort I'll stir some chopped raclette cooked through the pasta before I add the sauce to it. I can't stand bread crumbs on top, bits of useless sprinkled cardboard dust, I'll add some grated cheese instead.

Top tip:- Push a length of dried spaghetti through a piece of dried macaroni to create a miniature machine gun.

Definitely fusilli - macaroni just isn't as good for the sauce.

Full fat milk for the sauce - always extra mature cheddar ,English mustard and a pinch of nutmeg - bacon lardons and sliced tomato on the top.

More cheese on top obvs.

Add a 1/4 tsp of onion powder and the same of garlic powder as well as the mustard to the sauce. Some cooked chopped bacon, grated cheese on top. Don't hold back with the cheese, we're not at slimming world now.

Gatsbys Lobster mac & cheese

Use Cold water lobster its much much more tender.

Preheat your oven to 450°c Butterfly the lobster tails Place tails on baking tray & Brush tails with butter and lightly season & add a bit of lemon juice, Bake for 7 minutes. (They wont be fully cooked and shouldnt be as they will carry on cooking in the mac and cheese)

And make your mac and cheese your way, i use creamy glass bottle silver top milk... it gives much better results, also let it settle to room temperature, it stops clumping

once youve made the mac and cheese pop on your a mixed cheese, your shredded lobster, and... breadcrumbs! Yes get those bad boys on and a sprinkle of salt and... finely chopped spring onion and stick it in the oven

This is a mouthgasm
