I saw that recipe once by Jamie Oliver where he would grate cheese straight onto the pan and cheese toastie pressed onto it. That would create a nice crisp cheesy outer layer. Plus glorious melting cheese on the inside. Worth trying

This is going to put the cat amongst the pigeons but I should like to suggest a marmite and strong cheddar toasted sandwich.

And whoever put forward the beef crisps and cheese is also technically a genius

I had to,

American cheese—the kind you get in the individual plastic wrappers—is processed cheese or “cheese food,” meaning it's not actually real cheese. ... In short, Kraft Singles are made with less than 51% actual cheese, so it can't legally be called "cheese."

Perpignan and cap

Grate cheddar into a warm frying pan and add a good few gluggs of balsamic vinegar. Heat and stir until melted and pliable. Grill one side of one's chosen bread and add said cheese to the untoasted side. Enjoy.

Edinburgh.

The addition of caramelised onion chutney is great. However in Scotland the addition of haggis and sweet chilli jam is fabulous on cheese toast.

I tried Welsh Rarebit from a recipe. Grate various cheeses into a bowl. Mix and add some dark bottled beer (any kind but must be dark). Mix till it's mush add Lee&Perrins...slice thick crusty bread, dollop mixture on then bake for 10mins. Fiddly but rather nice
